Easy, made from scratch pancakes! Light and fluffy and made with ingredients you probably already have in your pantry. These taste so much better than pancakes made from a mix.
Add in fresh fruit, chocolate chips or sprinkles to your batter if you want. This recipe is super versatile and easily doubled or tripled depending on how many hungry people you are feeding.
Easy Homemade Pancakes

- 1 cup all-purpose flour
- 2 tablespoons white sugar
- 1 tablespoon brown sugar
- 2-1/2 teaspoons baking powder
- 1/2 teaspoon salt
- Pinch of nutmeg (optional)
- 3/4 cup milk (more or less depending on how thick you like your pancake batter)
- 1 teaspoon vanilla extract (I used Rodelle Bakers Extract)
- 3 tablespoons vegetable oil or melted butter
- 1 egg
Instructions
In a medium sized bowl combine all the ingredients. Stir until combined. Let mixture sit while pan is preheating.
Preheat medium sized pan on stovetop on medium heat. Add baking spray or butter if using non-stick pan.
Pour batter into pan, using as much batter for your desired sized pancake. Once bubbles form on top of the batter and the bottom of the pancake is golden brown, flip pancake and cook until done.
Repeat process with remaining batter. Serve warm.
