Some bunny loves you! And that bunny is meeeeeeee! Happy almost Easter y’all! One of my favorite holidays. Because who doesn’t like searching for hidden plastic eggs filled with candy and getting a giant Easter basket full of candy and all kinds of goodies?? Um—yeah me! Because my mom still makes me an Easter basket each year. Don’t judge! I know that’s not the true meaning of the Easter holiday, but however you celebrate Easter, I decided to round-up some of my favorite breakfast and brunch recipes for you, in case you need something special and yummy to make for Easter morning or any bright, Spring morning!

You can never go wrong with pancakes! And even though these Oatmeal Pancakes are on the “healthier” side, they are so amazingly good. It’s like eating an oatmeal cookie for breakfast!
Pomegranate Pound Cake is a great make ahead recipe, that you can make the day before, and then slice it up for breakfast or brunch on Easter morning. You can substitute the pomegranate seeds with any kind of fruit you want. This is a great recipe for feeding a crowd.
Baked Coconut Donuts! I love baked donuts! You could totally top these donuts with coconut dyed green for a more spring-y look too!
Apple Cinnamon Fritter Loaf Cake is another great make ahead recipe. My husband has declared this loaf cake the BEST thing I have ever made! Perfect for breakfast or brunch, with a cup of coffee.
Scones are always a crowd pleaser! My Peanut Butter Scones are super easy to make and the recipe yields sixteen triangles of goodness.
Banana bread is a classic. I mean who doesn’t love it?! And my Banana Bread with Cinnamon Sugar Crust is sooooo good. That cinnamon-sugar crust says it all. Another easy recipe that can be made ahead of time!
Rustic Apple Cinnamon Sugar Scones are yummy pastries full of that classic apple and cinnamon flavor. Mmmmmm….
