Yup. Donut bread pudding. For those rare occasions when you have 7 or 8 leftover glazed donuts that are about to go stale or have already gone stale. I know this may seem like a rare occurrence, but you know….it happened to me, so maybe it will happen to you? So instead of eating stale donuts (anything over a day old is stale in my book), I made bread pudding with my donuts!
You can use classic glazed, chocolate glazed, maple glazed or a mixture of all three. I used the yeast raised glazed donuts from my local donut shop, that ended up being about 4-5 days old by the time I got around to making this bread pudding.
And everything else you need to make this bread pudding are just basic pantry staples! It does take an hour to bake up, but waiting for that hour is the hardest part of this whole recipe!!
Donut Bread Pudding
Print RecipeIngredients
- 6-7 stale glazed donuts, cut into chunks
- 2 tablespoons melted butter
- 4 eggs, slightly beaten
- 2 cups vanilla coffee creamer (or milk)
- 1/2 cup white granulated sugar
- 2 tablespoons brown sugar
- 1 teaspoon vanilla extract (I used Rodelle Pure Vanilla Extract)
- 1/2 teaspoon salt
- 1/4 teaspoon ground nutmeg
Instructions
Preheat oven to 350-degrees. Spray the bottom and sides of a one-quart casserole dish, or an 8x8-inch baking pan, with baking spray.
Add the donut chunks to the casserole dish and pour the melted butter over the tops of the donuts and lightly mixture donuts. In a separate bowl, mix together the eggs, cream, white sugar, brown sugar, vanilla extract, salt and nutmeg. Pour the mixture over the top of the donuts and gently fold the donuts into the mixture. Let the donuts soak up the mixture for 5-minutes. After allowing the donuts to soak up the cream mixture, gently stir to ensure that all donuts have soaked up some of the mixture.
Cover the baking dish with the lid or foil and bake in 350-degree oven for 25-minutes. After 25-minutes, remove the lid or foil and continue baking for another 25-35 minutes. Donut bread pudding is done when the tops are lightly browned and the the mixture has set and isn't jiggly.
Remove from oven and let set for 5-minutes before cutting into desired sized squares. Serve warm.
Notes
Store leftovers at room temperature in an airtight container. Reheat in the microwave for 20-30 seconds to serve warm.
Okay, so it this donut bread pudding isn’t going to win any beauty awards…but really it’s all about the taste, right?!
See all that moistness?!!
Eat this for breakfast or as a dessert with some vanilla ice cream…it’s good whenever you want to eat it!
XOXO,
Kelly
