Sugar cookies full of dates! Date paste, date sugar and date pieces. Let’s Date sent me a box of date products and I was blown away! I had no idea how yummy dates were. And I totally am not a raisin person, so I had my doubts. But dates. Oh wow. So good!
And I like to think these cookies are a bit healthier than your classic chocolate chip cookies since I replaced some of the butter with date paste and the chocolate chips with date pieces. These cookies have a sweet, warm, cinnamon flavor.

Date Sugar Cookies

- 4 tablespoons unsalted butter, room temperature
- 2 tablespoons date paste
- 2/3 cup light brown sugar
- 1/4 cup white sugar
- 2 teaspoons vanilla extract (I used Rodelle Bakers Extract)
- 1 tablespoon water
- 2 egg yolks
- 1-1/3 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/8 teaspoon nutmeg
- 1-1/2 teaspoons cornstarch
- 3/4 cup chopped date pieces
- CINNAMON-SUGAR TOPPING:
- 1/4 cup white sugar
- 1 tablespoon date sugar (optional)
- 1/2 teaspoon cinnamon
Instructions
Preheat oven to 350-degrees and line a large cookie sheet with parchment paper and set aside.
In a large bowl mix together the butter, date paste, brown sugar, white sugar, vanilla extract and water. Mix until combined. Stir in the egg yolks. Stir in the flour, baking soda, salt, cinnamon, nutmeg and cornstarch and mix until just combined. Fold in the date pieces.
CINNAMON-SUGAR LAYER: In a small bowl mix together the sugar and cinnamon.
Use a standard sized cookie scoop to scoop cookie dough balls, roll in cinnamon sugar mixture and place onto prepared cookie sheet. Leave a few inches between the dough balls. Bake cookies in 350-degrees for 9-12 minutes, depending on your desired cookie doneness.
Let cookies set on cookie sheet for 5-minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature. Cookies stay fresh for several days.
