Boneless, skinless chicken breasts, bell peppers, a jar of marinara sauce and some Italian seasonings are all you need to make this easy meal.
This easy Crockpot recipe is full of warm Italian flavor and spice…thanks to the marinara sauce and Italian seasonings we add. I had the prep for this meal done in less than ten minutes, set my slow cooker to cook on low for 8-hours and had dinner ready right at 5pm. This recipe makes a lot too, so you should have leftovers. SCORE!!
Crockpot Italian-Style Chicken and Peppers
Print RecipeIngredients
- 4 boneless, skinless chicken breasts
- 3 bell peppers (any color), with the seeds and ribs removed and cut into thin strips
- 1 (25-ounce) jar marinara sauce
- 2 teaspoons Italian seasonings (I used Spices Inc)
- salt and pepper
Instructions
Place half of your bell pepper strips evenly on the bottom of the Crockpot. Salt and pepper both sides of your chicken breasts and lay the chicken on top of the peppers. Layer the remaining bell peppers on top of the chicken and sprinkle the Italian seasoning over the chicken and peppers. Pour the entire jar of marinara sauce evenly over the chicken and peppers. Put the lid on and cook on low for 8 hours.
When chicken is done cooking, use a knife to shred the chicken in the Crockpot with all the juices. Keep all the juices (or the majority of the juice) if transferring to another dish or container. Serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator.
Once your chicken is done cooking, it will look like this….and there will be a lot of juices in the Crockpot. We want those juices though!
Use a fork to shred the chicken while it is still in the Crockpot (once it’s all done cooking). Let the chicken soak up the juice. That juice will help keep the chicken moist and flavorful.
XOXO,
Kelly

August 23, 2018 at 7:17 PMHi Kelly. I love that you did a savory recipe!!!! Being that it’s still in the upper 90’s here in NC I really love that its in the crockpot too!!! Would love to see any other savory recipes in the crockpot that also do not require searing the meat on stovetop, as I feel that would be counter productive. Thanks again and still keep up the sweet treats as well.
