Super simple, crockpot BBQ pulled pork. A dinner that makes itself! Pork shoulder, onion, seasonings, barbecue sauce, vinegar and liquid smoke are all the ingredients you need to make this pulled pork. Plus soft sandwich rolls if you choose to serve the pulled pork as a sandwich, like I did.
I have been making this easy dinner recipe for YEARS. It is a family favorite, and a favorite of mine because there isn’t much work involved. Get the pork going in the Crockpot first thing in the morning, and 10-ish hours later, you have dinner on the table for the family.
Crockpot BBQ Pulled Pork

- 1 Boston Butt or pork shoulder roast, trimmed of excess fat
- 1 large yellow onion, quartered
- salt and pepper to taste
- 1 teaspoon garlic powder
- 1 (28-ounce) bottle your favorite BBQ sauce
- 1/4 cup white vinegar
- 2 teaspoons liquid smoke
Instructions
Place trimmed pork roast in the Crockpot. Season the pork roast and add the quartered onion on top. Cover the Crockpot with the lid and cook on low for 9-11 hours, or until tender and shreddable. Cooking time may vary depending on the size of your pork roast. Once pork is tender, remove the pork from the Crockpot and place in a large bowl. Discard the juices and onion.
Use two forks to pull the pork into shreds. Add the BBQ sauce, vinegar and liquid smoke to the pork and stir until combined. Pour the pork mixture back into the Crockpot and cook on high for 45-60 minutes. Serve warm.
Notes
Store leftover pork in an airtight container in the refrigerator.
Eat this pulled pork as is, or on a soft roll.
