These super easy cookies are made using boxed cake mix, with just cream cheese, butter and an egg added. Takes just a few minutes to make and the flavor options are endless!
I love baking from scratch, but I’m also all about short cuts. Using a box cake mix to make cookies is a great way to make “homemade” cookies when you are short on time.
For my cookies, I used strawberry cake mix and then rolled the cookie dough balls in Fruity Pebbles cereal before baking.
Cream Cheese Cake Mix Cookies

- 1 (8-ounce) block full fat cream cheese, room temperature
- 1/2 cup unsalted butter, room temperature
- 1 egg, room temperature
- 1 teaspoon vanilla extract (I used Rodelle Bakers Extract)
- 1/2 teaspoon salt
- 1 (15.25 ounce) box cake mix - any flavor
- Optional: sprinkles or Fruity Pebbles cereal
Instructions
In the bowl of a stand mixer, affixed with the paddle attachment, cream together the cream cheese and butter until creamy. Add egg, vanilla and salt and mix until combined.
Turn mixer to low speed and add the entire package of dry cake mix. Mix until combined.
Option to add candy, nuts, chocolate chips, etc depending on the flavor cake mix you used.
Pour dough onto plastic wrap, tightly cover, and refrigerate overnight.
Once chilled, preheat oven to 350-degrees. Line two baking sheets with parchment paper. Use a standard sized cookie scoop to scoop cookie dough balls.
Option to roll cookie dough balls in sprinkles or Fruity Pebbles cereal. Place cookie dough on prepared cookie sheets and bake 9-11 minutes in 350-degree oven. Allow cookies to set and cool for 10-minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature. Cookies stay fresh 3-4 days.
