I took my all time favorite cornbread mix, Marie Callender’s, and doctored it up by adding golden, sweet whole kernel corn, a little water and baked it for just a quick 20-minutes! This is the best cornbread EVER!
I bake. From scratch. All the time. And I have made cornbread from scratch before too, but I have a deep rooted love for Marie Callender’s cornbread mix. Plus sometimes all you have time for is a good ol’ recipe made using a mix.
So I made a few changes to the ingredients and directions from the original directions on the back of the Marie Callender’s mix, to come up with this Corny Cornbread!
Easy as 1-2-3 to make this cornbread batter!
Corny Cornbread - From a Mix!

- 1 (16-ounce) bag of Marie Callender's cornbread mix
- 1/2 cup of canned golden, sweet whole kernel corn (drained of any liquid)
- 3/4 cup water
Instructions
Preheat oven to 375-degrees. Line an 8x8-inch baking pan with parchment paper or foil and spray the bottom and sides with baking spray. Set aside.
In a large mixing bowl, dump entire pouch of cornbread mix, water and 1/2 cup of corn. Mix until combined and then pour out into prepared baking dish.
Bake in 375-degree oven for 18-20 minutes or until a toothpick inserted in the middle comes out without raw batter on it.
Remove from oven when done, and set on wire rack to cool for several minutes before slicing into desired sized squares.
Serve warm, cold, with butter or honey!
Notes
Store in an airtight container at room temperature.

January 17, 2017 at 2:38 PMKelly I love the addition of corn! Cornbread always reminds me of of my mom making ham hocks and beans to go along with the corn bread and we always used Jiffy Mix. I didn’t know Marie Callendar had a cornbread mix, so I’m gonna have to try it now! Yum!

I haven’t had Jiffy since I was a kid….good memories 🙂 They sell the Marie Callendar’s mix at grocery stores, Walmart and sometimes in huge bags at Costco here in California! I know they sell them online too (Amazon, Walmart, etc) 🙂 XOXO
