Cookie Butter No Bake Bars are made with a layer of crushed cookies, butter, powdered sugar and cookie butter and then topped with chocolate. It’s like the classic Chocolate Peanut Butter No Bake Bars, but even better. Especially if you are a cookie butter addict like me!
The classic chocolate peanut butter bars are a recipe I make often. Funny enough, I don’t have that recipe here on the blog, however I do have Chocolate Peanut Butter Cups (with the option of making them into bars instead) and Outrageous Chocolate Peanut Butter Bars. But with an extra jar of cookie butter in the pantry, I dreamt up a no bake cookie butter bar that was a spin off the classic chocolate peanut butter bar that I love so much. And these Cookie Butter No Bake Bars are soooooo good.
I used Bakeology gluten free Snickerdoodle Cookie Bites and Vanilla Chai Cookie Bites to make up the cookie layer. You can also use graham crackers (maybe even cinnamon graham crackers?!), Nilla Wafers, sugar cookies or shortbread cookies instead. I am all about options! These bars could also be completely gluten free, if you find gluten free cookie butter.
Cookie Butter No Bake Bars

- COOKIE LAYER:
- 1/2 cup salted butter, melted
- 1 (14.1-ounce) jar cookie butter (I used creamy)
- 2-3/4 cups fine cookie crumbs (I used 2 6-ounce bags of Bakeology gluten free cookies: Snickerdoodle and Vanilla Chai)
- 2-1/2 cups powdered sugar
- CHOCOLATE LAYER:
- 2 cups semi-sweet chocolate chips
- 2 tablespoons shortening
Instructions
Line a 9x13-inch baking pan with foil and spray the bottom and sides of the pan with baking spray. Set aside.
PREPARE COOKIE LAYER: In a large microwave safe bowl, melt the butter. Remove the bowl from the microwave and stir in the entire jar of cookie butter. Stir in the cookie crumbs until well incorporated. Stir the powdered sugar into the mixture, one cup at a time, stirring the sugar in completely before adding the additional cup of sugar.
Pour mixture out into prepared pan and smooth into an even layer in the pan. Place pan in the refrigerator to chill for 15-minutes.
PREPARE CHOCOLATE LAYER:
Once the cookie layer has chilled, add the chocolate chips and the shortening to a bowl and microwave until melted. Stop every 15-seconds to stir the chocolate and be careful not to scorch your chocolate. It should only take 90-120 seconds for the chocolate to melt. Pout melted chocolate over the top of the cookie layer. Let the bars set at room temperature for 30-minutes, before transferring to the refrigerator to finish chilling.
Once the bars have chilled and set, cut into desired sized squares. Take the bars out of the fridge and let sit at room temperature for 10-minutes before cutting into squares.
Notes
Store bars in the refrigerator in an air tight container.
