Chocolate truffles. Super easy and the perfect treat to make for the holidays! You can also decorate and coat them in whatever topping you want. Roll in chocolate sprinkles, powdered sugar, cocoa powder or crushed graham crackers. If you have Christmas sprinkles, these would look quite festive rolled in those too!
I made these truffles to accompany two dozen Thanksgiving-designed chocolate cupcakes I made for a cupcake order! Chocolate overload!
This is the chocolate I used to make the truffles. Good quality chocolate is a must.

Chocolate Truffles

- 6-ounces good quality dark chocolate (I used Trader Joes Pound Plus Bar), cut into chunks
- 1/4 cup heavy whipping cream
- 3 tablespoons unsalted butter, cubed
- 1 teaspoon vanilla extract
- 2 tablespoons powdered sugar
- Cocoa powder, sprinkles, powdered sugar, graham crackers or anything else you have on hand to roll truffles in!
Instructions
Put chocolate in a microwave-safe bowl. Pour heavy whipping cream over the chocolate, covering the chocolate. Sprinkle cubed butter over the chocolate. Microwave for 90-seconds. Remove bowl from microwave and use a whisk to stir mixture until it starts to become smooth. Add vanilla extract and two tablespoons powdered sugar to the chocolate, and whisk until incorporated and the chocolate mixture is smooth.
Let chocolate cool, then place in the refrigerator to finish setting up. Check on the chocolate every 10-minutes or so, so it does not firm up too much that you can't work with it.
Once chocolate is firm enough to hold shape, roll into balls and then into desired topping. Put back in refrigerator to firm back up and fully set.
Notes
Store in airtight container in the refrigerator.
This is the the first batch of truffles I made, which I rolled in chocolate sprinkles, cocoa powder and powdered sugar. The second batch I rolled a few truffles in graham cracker crumbs!
