Chocolate slice and bake cookies, dipped in chocolate and sprinkled with fun holiday sprinkles. Slice and bake cookies are reminiscent of that cookie dough you find in the refrigerator section of the grocery store….except this is ALL chocolate and all made from scratch!
You guys ready for a cookie party?? As you may (or may not) know, I am a brand ambassador for Rodelle. Which is why you see in my recipes, that I exclusively use Rodelle vanilla extract and other Rodelle products. I used Rodelle Gourmet Baking Cocoa and Rodelle Chocolate Extract in my chocolate slice and bake cookies, which gave these cookies the PERFECT chocolate flavor. Not too rich in chocolate flavor, but not too light either. And of course I had to add a splash of Rodelle Baker’s Extract to these cookies too. IT IS MY FAVORITE (as you already may know if you are an avid reader of the blog). And FYI….you can find Rodelle Baking Cocoa at Costco now!
I love this recipe because it NEEDS to chill in the refrigerator for a bit (at least an hour). Which for me means that I make the dough one day, and slice and bake the next. Or you can even make the dough and freeze it until you need it. This works great for the busy holiday season when you have a few minutes to mix up this dough….because it literally takes but just a few minutes to make.
And baking is equally as easy….just slice your cookies and pop them in the oven. And just to note….the lines you see in my dough is from wrapping the dough in plastic wrap. The lines aren’t that noticeable after baking and you definitely can’t see any lines if you choose to top your cookies with melted chocolate and sprinkles!
Oh and these cookies DO NOT SPREAD! So you just need to leave an inch or so in between each cookie when baking…and no worrying about cookie puddles (aka: when all your cookies run together on the cookie sheet).

Chocolate Slice and Bake Cookies

- 1 cup unsalted butter, room temperature
- 1 cup powdered sugar
- 1-1/2 teaspoons Rodelle Chocolate Extract
- 1/2 teaspoon Rodelle Baker's Extract
- 2 tablespoons milk
- 1/4 teaspoon salt
- 1/2 cup Rodelle Gourmet Cocoa Powder
- 2 cups all-purpose flour
- TOPPING:
- 1 cup milk chocolate chips or chocolate almond bark
- SPRINKLES
Instructions
In the bowl of your stand mixer, affixed with the paddle attachment, cream together the butter and powdered sugar. Add the chocolate extract, vanilla extract, milk and salt to the mixer. Mix on medium-high speed until incorporated. Scrape down the sides of the bowl as needed.
Change the mixer to low speed and add the cocoa powder and flour to the mixer. Mix until just combined. Remove the bowl from the mixer and lay out two long strips of plastic wrap. Divide the dough into two portions, evenly laying out one portion on each strip of plastic. Use the plastic wrap to start rolling the dough into a log, forming a log that is approximately 2-inches high and 10-inches long. Repeat on the second dough ball. Wrap cookie dough logs tightly in plastic wrap and refrigerate for at least 1-hour or overnight.
Once the dough has chilled thoroughly, preheat the oven to 350-degrees and line two cookie sheets with parchment paper. Remove one cookie dough log from the refrigerator and slice cookies 1/2-inch in thickness. Place cookies on cookie sheet and bake in 350-degree oven for 12-minutes. Remove cookies from the oven and let set on the cookie sheet for 4-minutes before transferring to a wire rack to finish cooling. Repeat slicing and baking with the second log of cookie dough.
Once cookies had cooled, melt one cup of chocolate chips or almond bark in the microwave. Stop every 15-seconds to stir the chocolate to ensure it does not scorch. Once melted, use a spoon to spread a layer of chocolate on top of each cookie and immediately top with sprinkles (if desired). Chocolate topping and sprinkles are optional.
Notes
Store cookies in an airtight container at room temperature.
So you can totally eat these cookies as is….
But adding melted chocolate and sprinkles on top takes these cookies up a few notches….a sweet milk chocolate coating, coupled with the crunch of the sprinkles with the firm cookie texture, makes these cookies worthy of any holiday plate.
