Homemade brown sugar caramel and peanut butter, drizzled over Rice Chex cereal, mini marshmallows and chocolate chips, to make the ultimate chocolate peanut butter cereal treat! Easy to make cereal treats that will feed a crowd (or a briefing room full of cops)…because these bars were made for a purpose, and there’s a funny story that goes behind making these!
First off, these treats are super easy to make and I whipped these up in less than 20-minutes while I was on my lunch break at work one day (that included gathering the ingredients, making them and cleaning up). Second, who doesn’t love the combination of chocolate and peanut butter?!?! So I brought these into work with me the next morning and everyone asked what these bars were called. My answer? They are called “Sorry-I-Locked-Brandon-In-A-Building Bars.” Yes….that’s where this funny story comes into play, and my reason for why I was making these on my lunch break.
So there I was on a busy Saturday afternoon, working central area patrol with my beat partner, Brandon. We both got dispatched to my beat, to check a closed business, where the alarm was going off and a person was seen leaving the inside of the business. Once we got there, a key holder unlocked one of the outer exterior doors for us to check the large business to ensure no one else was inside. Mind you, this was a fairly large business, with multiple offices and a second floor. Brandon and I were doing our best to clear it, just him and I. As Brandon went to clear the waiting room area (think doctors office), I followed behind and let the door into the waiting room close behind us. As soon as I looked back at the door, I knew it had locked….and then realized so were all the other doors from the waiting room and the front entrance. So there Brandon and I stood looking at each other, as I had to admit I just locked us in the waiting room. Yep. Rookie mistake on my part by this 15-year veteran.
I got on my radio and asked dispatch to have the key holder go around to the front of the business to unlock the door. This obviously caused some confusion, so I ended up having to tell dispatch I locked myself and Brandon inside the business and we couldn’t get out. And then the key holder came around to unlock the door (and he was obviously confused too) so I had to laugh and tell him what I did. Hahaha. But I am good at owning up to my mistakes. And when you make a mistake at work, the guys expect food the next day. So that’s why these bars were made.
Super easy and super yummy! And I bet you have most of these ingredients in your pantry already. These bars are a great treat to make for backyard BBQ’s, camping trips and for when those hot summer months hit and you want something sweet, but don’t want to turn the oven on. Pin this for later! Chocolate Peanut Butter Caramel Cereal Treats

- 1 cup light brown sugar
- 1 cup light corn syrup
- 1 cup creamy peanut butter
- pinch of salt
- 6 cups Rice Chex cereal
- 2 cups semi-sweet chocolate chips
- 1 cup mini marshmallows
Instructions
Line a 9x13-inch baking pan with foil and spray the bottom and sides of pan with baking spray. In a large bowl, mix together the Rice Chex, semi-sweet chocolate chips and mini marshmallows. Set aside.
In a medium-sized pot on the stovetop, over medium heat, add the brown sugar and light corn syrup. Stir until combined and then let the mixture come to a boil. Once the mixture comes to a boil, boil for 1-minute and then remove the mixture from the stovetop. Immediately stir in the peanut butter and salt into the caramel mixture. Slowly drizzle the mixture over the cereal in the bowl, stirring the cereal as you drizzle, to ensure all cereal pieces get coated. Pour entire mixture over cereal and stir until combined.
Dump mixture out into prepared pan and press gently into an even layer in the pan. Option to add additional chocolate chips and marshmallows on top to make the bars pretty. Let bars set before cutting into desired sized squares.
Notes
Store bars at room temperature in an air tight container. Bars stay fresh for 3-4 days.
