My favorite holiday candy recipe that I make…because it tastes just like a peanut butter cup! The bottom layer consists of peanut butter, powdered sugar and graham cracker crumbs and then topped with melted chocolate. An easy, no bake candy recipe that is sure to please any chocolate-peanut butter fan!
This candy recipe does not require any fancy equipment or a candy thermometer. I do use my stand mixer to make these bars, but you can also just make them in an extra large bowl and use some good ol’ elbow grease to stir the ingredients together.
Chocolate Peanut Butter Bars
Print RecipeIngredients
- 2 cups creamy peanut butter
- 1 cup unsalted butter, melted
- 2 teaspoons vanilla extract (I used Rodelle Pure Gourmet Vanilla)
- 3-3/4 cups powdered sugar
- 1-2/3 cups fine graham cracker crumbs
- Chocolate ToppIng:
- 3 cups semi-sweet chocolate chips, divided
- 1 tablespoon peanut butter
Instructions
Line a 9x13-inch baking pan with foil and spray with baking spray. Set aside.
PEANUT BUTTER LAYER: In the bowl of a stand mixer, affixed with the paddle attachment (or in a large bowl, stirring by hand), add the peanut butter and melted butter. Mix until ingredients are combined. Next, add the vanilla extract and powdered sugar into the butter mixture, adding the powdered sugar cup by cup. Make sure each cup of powdered sugar is incorporated into the butter mixture before you add the next cup of powdered sugar. After the sugar is incorporated into the butter mixture, add the fine graham cracker crumbs and mix until all ingredients are combined.
Pour the mixture into the prepared 9x13-inch pan and press out into an even layer. Prepare chocolate topping.
CHOCOLATE TOPPING: In a microwave safe bowl, add the three cups semi-sweet chocolate chips and one tablespoon peanut butter. Microwave in 10-second intervals, stirring in between. Be careful not to scorch your chocolate or over cook it. And whatever you do DO NOT WALK AWAY FROM THE CHOCOLATE MELTING IN THE MICROWAVE! It only takes me 1 to 1-1/2 minutes to melt the chocolate. Once melted, spread the chocolate evenly, covering the entire peanut butter layer.
Let bars set on the counter for 1-hour before transferring to the refrigerator to cool completely. Once the bars have cooled, allow the bars to sit at room temperature for 20-30 minutes before cutting, to ensure easy cutting.
Notes
Store bars in the refrigerator in an airtight container. Bars stay fresh for 1-2 weeks.
XOXO,
Kelly
