The classic no bake cookie recipe! Full of rich cocoa, peanut butter and oats. These take just minutes to make and are super easy make.
When making these no bake cookies, only add enough oats to reach a scoop-able consistency. They should still have some liquid to them when scooping, because the oats will continue to soak it up as they set.
Basically, you donโt want the mixture solid like regular cookie dough balls when you scoop them, nor do you want them too liquidy. You need to find that right balance of enough oats for them to set, but not too much to make them dry and crumbly.

- 1/2 cup butter
- 1/2 cup evaporated milk
- 2 cups white granulated sugar
- 1/4 cup cocoa powder (I used Rodelle)
- 1-1/2 teaspoons vanilla extract (I used Rodelle Bakers Extract)
- 1/2 cup peanut butter
- 2-1/2 to 3 cups quick cooking oats
Instructions
Place a long strip of wax paper, foil or parchment paper on the counter to drop your cookies on.
In a medium sized pot, add the butter, milk, sugar and cocoa powder to the pot. Put the pot on the stovetop over medium heat. Stir mixture occasionally as you measure out the peanut butter and get the oats ready. Once the mixture comes to a rolling boil, start the timer and boil for exactly 1-minute. Do not boil any longer. During that minute, stir the mixture constantly.
Once the minute is up, remove the pot from the stove. Immediately stir in the vanilla extract to the mixture. Add the peanut butter to the hot mixture and stir until almost combined. Stir in oats, one cup at a time, making sure each cup is completely mixed into the chocolate mixture, before adding the next cup of oats. Add only enough oats to reach desired consistency (see blog post above for details).
Use a small-medium sized cookie scoop to drop cookies onto the wax paper.
Let the cookies set completely and cool on the wax paper.
Notes
Store cookies in an airtight container, at room temperature. Cookies are best eaten within a day or two of making, but will stay fresh for 3-4 days.
