Classic chocolate chip cookies, but in bar form and with three kinds of chocolate: Hershey’s milk chocolate Kisses, semi-sweet chocolate chips and chunks of bittersweet chocolate. This bar cookie recipe is great when you need a quick dessert, but don’t have time to scoop out individual cookies.
I made these cookie bars to bring to training day because when people see me, they expect treats. Our training day this month was emergency vehicle operations (EVOC), which meant that we were out in the middle of no where at an old Naval auxiliary landing field. Because we needed wide open asphalt for what we were doing! We did some fun collision avoidance courses, drove the patrol car on an oil soaked area where we could completely spin out, slow speed accuracy driving, code three driving (lights and siren) and then the fun part…pursuit driving where we chased a “rabbit” car through a course that is lined by cones the size of the patrol car, yet you are navigating the course at high speeds trying to catch the rabbit car (without hitting the cones).
All that driving had us hankering for an afternoon snack, and what’s better than a chocolate chip cookie?! Well when Kelly works all day and is dog-tired, you get Chocolate Chunk Bars instead. I made these bars the night before training and the guys loved them! You can use all semi-sweet chocolate chips in your bars, but I just so happened to have three different kinds of chocolate in my pantry.
I love putting whole Kisses in the dough because who wouldn’t want to sink their teeth into a Kiss when taking a bite of cookie bar?!
Chocolate Chunk Cookie Bars

- 12 tablespoons unsalted butter, melted and semi-cooled
- 1 cup light brown sugar, packed
- 1/2 cup white granulated sugar
- 1 egg, room temperature
- 1 egg yolk, room temperature
- 2 teaspoons vanilla extract (I used Rodelle)
- pinch of ground nutmeg
- pinch of salt
- 2 cups + 2 tablespoons all-purpose flour
- 1/2 teaspoon baking soda
- 2-1/2 cups chocolate chips and chunks
Instructions
Preheat oven to 325-degrees. Line a 9x13-inch baking dish with foil and spray the bottom and sides with baking spray. Set aside.
In the bowl of a stand mixture, affixed with the paddle attachment, add the melted butter, brown sugar and white sugar. Mix on medium-high speed until completely incorporated and creamy. Add the egg and egg yolk into the mixture and mix until combined. Mix in the vanilla extract, nutmeg and salt.
Change the mixer to low speed and slowly add the flour and baking soda into the dough mixture. Mix until just combined. Fold in the chocolate chips.
Pour cookie dough into prepared pan, pushing the dough into an even layer. Bake in 325-degree oven for 25-28 minutes or until the middle is set and doesn't jiggle when you shake it.
Remove baked cookie bars from the oven and let bars set in the pan until cooled. Once cooled, cut into desired sized squares.
Notes
I used 1 cup bittersweet chocolate chunks, 20 Hershey Kisses and 1 cup semi-sweet chocolate chips. Store cookie bars at room temperature in an airtight container.

April 12, 2018 at 8:10 AMA pinch of nutmeg just adds a little bit more personality. I actually prefer bars to cookies because of the uniform shape and the fact that they don’t dry out. Bar recipes are perfect for the office and school bake sales. My favourite usually has peanut butter in it but with all the allergies out there, I tend to save them for home only.
