A chocolate twist on the classic oatmeal cookie! Chocolate cookie dough made with unsweetened baking chocolate, oats and chunks of semi-sweet chocolate, baked to soft cookie perfection. Divinely good chocolate chocolate chunk oatmeal cookies….
I have quite a few recipes for brownies already on my blog. But what I really love is chocolate AND cookies AND oatmeal so here ya go.
Chop up an entire Semi-Sweet Baking Chocolate Bar for these cookies…but save a few chocolate chunks to press on top of the cookies after baking. Just to make them look extra pretty!
Mmmmm…cookie dough…..go ahead and try to resist sneaking a taste!
Chocolate Chocolate Chunk Oatmeal Cookies

- 1/2 cup unsalted butter
- 2 ounces unsweetened baking chocolate
- 1 cup white granulated sugar
- 1 egg, room temperature
- 2 teaspoons vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cornstarch
- pinch of salt
- 1 cup quick cooking oats
- 1/2 cup semi-sweet chocolate chunks
- SUGAR TOPPING:
- 1/4 cup white granulated sugar
Instructions
Preheat oven to 350-degrees and line a large cookie sheet with parchment paper.
In a microwave safe bowl, melt together the butter and unsweetened chocolate, stopping every 15-seconds to stir. Remove from microwave and let sit for 5-minutes. Stir in the sugar, egg and vanilla extract into the melted chocolate mixture. Stir in the flour, baking soda, cornstarch, salt and oatmeal. Fold in the chocolate chunks.
In a small bowl, add the 1/4 cup sugar. Scoop cookie dough balls and roll in sugar. Place cookie dough balls on cookie sheet a few inches apart and bake in 350-degree oven for 7-minutes. Remove from oven (option to press more chocolate chunks onto the tops of the cookies to make them look pretty, while the cookies are still hot). Let baked cookies set on cookie sheet for 5-minutes before transferring cookies to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature.
