Chocolate Chip Cookie Bars with Cereal Crunch

A huge 9×13-inch pan of  luscious, rich, chocolate chip cookie bars, studded throughout with milk chocolate chips and chocolate cereal crunch.  WAIT!!  What is chocolate cereal crunch??  Oh just the best way ever to add a little crunch and texture to your cookies.  And it is easy to make too!!

So there I was.  With a hankering for chocolate chip cookies, but with no desire to make actual cookies.  And then there was that open box of Corn Chex looking awful lonely in the pantry.  So I thought….why not cover the Corn Chex in melted chocolate and then add it into chocolate chip cookie dough and bake em up into bars?!  YES!!

The cereal crunch adds even more chocolate flavor, with a crunchy texture to the otherwise soft cookie bars.  Now you can go ahead and totally skip the cereal crunch and just add another cup of chocolate chips instead.  And if you don’t have Corn Chex, use any other cereal you may have on hand (one that goes well with chocolate and chocolate chip cookies of course….so maybe skip the Fruit Loops).  I am all about options!!

Chocolate Chip Cookie Bars with Cereal Crunch

Ingredients

  • CHOCOLATE CEREAL CRUNCH:
  • 1/2 cup semi sweet chocolate chips, melted
  • 1 cup cereal (I used Corn Chex)
  • CHOCOLATE CHIP COOKIE BARS:
  • 12 tablespoons unsalted butter, melted and cooled slightly
  • 1 cup light brown sugar, packed
  • 1/2 cup white granulated sugar
  • 1 egg + 1 egg yolk, room temperature
  • 2 teaspoons vanilla extract (I used Rodelle Gourmet Vanilla Extract)
  • 1/4 teaspoon salt
  • pinch of nutmeg
  • 2 cups + 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking soda
  • 1 cup milk chocolate chips
  • 1 cup chocolate cereal crunch (or substitute an additional cup of chocolate chips)

CHOCOLATE CEREAL CRUNCH: Lay a strip of foil on the counter. In a bowl, place the chocolate chips and melt in the microwave, stopping every 15 seconds to stir. Once melted, remove from the microwave and add the cereal, stirring the cereal gently into the chocolate to coat the cereal. Pour the cereal out onto the foil in a single layer to set. Prepare cookie dough.

CHOCOLATE CHIP COOKIE BARS: Preheat oven to 325-degrees. Line a 9x13-inch baking pan with foil and spray the bottom and sides with baking spray. Set aside. In the bowl of a stand mixer, affixed with the paddle attachment, add the butter, brown sugar and white sugar. Mix on medium-high speed until light and fluffy. Change the mixer to low speed and add in the egg and egg yolk, vanilla extract, salt and nutmeg. Mix on medium high speed until well combined and creamy. Stop the mixer and scrape down the sides and bottom of the bowl.

On low speed, add the flour and baking soda, mixing until barely combined. On low speed, add the chocolate chips and chocolate cereal crunch. Mix until barely combined and then remove the bowl form the mixer and use a rubber scraper to finish incorporating all of the ingredients together.

Pour cookie dough into an even layer in prepared 9x13-inch pan. Bake in 325-degree oven for 20-22 minutes, or until the edges are just lightly brown. Do not over bake! Cookie bars may look under done, but they continue to bake and set in the pan after you remove them from the oven.

Allow cookie bars to set in the pan for 30-60 minutes before cutting into desired sized squares.

Notes

Store cookie bars at room temperature in an air tight container. Cookie bars stay fresh for several days. Cereal crunch on its own stays fresh in a ziplock bag for 7-10 days.

If you have a party you are going to, these cookie bars are quick  and easy to make and EVERYONE will love them.  Promise!
