Chicken Parmesan Casserole

Chicken Parmesan Casserole tastes just like the classic Italian dish, but is made completely in a casserole dish.  Which makes this recipe super EASY!  A layer of cooked chicken is topped with marinara sauce, mozzarella cheese and parmesan cheese, bread crumb topping and then baked up in a 9×13-inch baking dish.

This casserole can be made ahead of time and frozen, or make this dish in the morning and leave in the fridge until you get home from work…then just pop it in the oven to have dinner hot and fresh in less than 30-minutes!

Chicken Parmesan Casserole

Serves: 6-8 Cooking Time: 25-30 minutes

Ingredients

  • 4 boneless, skinless chicken breasts, cooked and chopped into small pieces
  • 1 (24-ounce) jar marinara sauce (I used a tomato and basil marinara sauce)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup parmesan cheese
  • 2 tablespoons butter, melted
  • 1 teaspoon Italian seasoning blend
  • salt and pepper
  • 1 cup panko bread crumbs (can use gluten free)

Instructions

Preheat oven to 350-degrees. Line a baking dish with foil and spray the bottom and sides with cooking spray.

Layer the cooked chicken into the baking dish, pour the marinara sauce evenly over the chicken, sprinkle the mozzarella cheese on top of the sauce and evenly layer the parmesan cheese over the mozzarella cheese.

In a small bowl mix together the melted butter with the Italian seasonings, salt and pepper and bread crumbs. Evenly sprinkle the bread crumbs on top of the casserole.

Bake casserole in 350-degree oven for 25-30 minutes, or until bread crumbs start to turn a light golden color. Remove from the oven and let set for 5-minutes before serving.

Notes

Freezer instructions: Prepare casserole but do not bake. Cover casserole with freezer-proof plastic wrap. The night before you are ready to bake, remove the casserole from the freezer and let defrost in the refrigerator. If possible, remove the casserole from the fridge an hour or two before baking to allow the pan and casserole to come to room temperature. Refrigerator instructions: Prepare casserole but do not bake. Cover casserole and place in the refrigerator for 1-2 days prior to baking. Follow above directions. Store leftovers in an air tight container in the refrigerator.

    Well you are right about the cheeeeeeese! I have to admit that I get a little excited when I see that you have made a main dish. I always know that your meals are going to be relatively quick and easy, but so delicious, and I’m always looking for more of those recipes.
