Peanut butter oatmeal cookies, with chocolate chips AND (!!!) Honey Nut Cheerios added into the cookie dough! Because when this girl has leftover Cheerios, she puts them to use. This recipe is super easy to whip up and makes a lot of cookies. And because there’s cereal in them, we get to eat them for breakfast 🙂
So remember when I made my Cheerios and Cookies Marshmallow Treats?? Well I had about three cups of Honey Nut Cheerios left. I put the leftover bag of Cheerios in the pantry, by the rest of the cereal that Ethan eats for breakfast. Totally forgetting about my conversation with Ethan (and James for that matter), about eating up whatever box of cereal, cookies or chips or crackers they open before opening a new package. Because at one time I had a pantry full of several opened, half-eaten packages of cereal, chips and cookies. And that drives me nuts because I can’t waste food.
So there’s that opened bag of Cheerios. I left for work at o’dark thirty while both boys were still asleep. Apparently Ethan got up to eat breakfast before James got up, saw the opened bag of (very unexciting) Cheerios and thought he had to eat them for breakfast. Later Ethan asks James, “Why does Kelly buy me cereal that isn’t on my list of cereals I like?” Hahahaha. James was quick to tell him the Cheerios were from the marshmallow treats I had made, and not necessarily for breakfast.
Once James repeated that story to me, I decided to use up the rest of the Cheerios by putting them into cookies!! Cookies that Ethan loved and ate in his lunch everyday at school. Who doesn’t like Cheerios now?! Hehehe.
Cheerios Cookies

- 3/4 cup white granulated sugar
- 1/2 cup light brown sugar, packed
- 1/2 cup unsalted butter, room temperature
- 1/2 cup creamy peanut butter
- 1 tablespoon vanilla extract (I used Rodelle Baker's Extract)
- 1 egg, room temperature
- 1/4 cup water
- 1-1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon cornstarch
- 1 cup quick-cooking oats
- 1 cup semi-sweet chocolate chips
- 3 cups Honey Nut Cheerios
Instructions
Preheat oven to 375-degrees and line a cookie sheet with parchment paper. Set aside.
In the bowl of a stand mixer, affixed with the paddle attachment, cream together the butter, white sugar and brown sugar until light and fluffy. Add the peanut butter and vanilla extract. Mix on medium-high speed until fully incorporated. Add the egg and water and mix until combined.
Change the mixer to low speed and add the flour, baking soda, cornstarch and oats. Mix until barely combined. Remove the bowl from the stand mixer and fold in the chocolate chips and Cherrios. Scoop medium-sized cookie dough balls out onto prepared cookie sheet.
Bake in 375-degree oven for 10-minutes. Let baked cookies set on the cookie sheet for several minutes before transferring to a wire rack to cool completely.
