I think I have a small obsession with cold cereal. My obsession with cereal is more with using it to bake with, than eating it though. Rice Krispie treats, cereal on top of blondies, cereal as a topping for donuts and cereal mixed into cookies…yep…I do all of the above! In my defense, I was raised on cold cereal. That’s what we ate for breakfast during the week when I was a kid. So this recipe…I was searching for a quick and easy no-bake recipe to make for a bake sale and realized I had never used Corn Pops in a dessert recipe, so I was sold! I used to love Corn Pops as a kid. And if you have a kid, they can definitely help you with this easy recipe. The only time consuming part of this recipe comes from unwrapping all of the caramels (but that’s where you can put your kids to work!).
These Caramel Corn Pops Bars taste like caramel corn, hence the name. I think my husband was expecting them to taste like a Rice Krispies treat, but they don’t. There’s no marshmallows involved in this recipe…but then that got me thinking of Corn Pops Marshmallow Treats. I may have to try marshmallows in place of the caramels next time!
These treats just remind me of being a kid! Speaking of kids…yesterday I babysat my two nieces for a few hours until my brother-in-law got home from work. My nieces, Miss G (3-years old) and Miss A (1-year old) are EXACTLY like me and my sister. It was just my sister and I growing up, so we always played together. I am lucky to still have such an amazing and close relationship with Wendy to this day! It is so funny to watch Miss A and Miss G together, because I see so much of Wendy in Miss G…Miss G is fearless, outgoing, full of sass, independent and the spitting image of Wendy when Wendy was Miss G’s age. Miss A is a cuddly, happy-go-lucky, little sister that follows her big sister around, just like me. So yesterday, me and the girls played tag, hide-and-go-seek, and we tickled each other and laughed and laughed and laughed. I love the time I got to spend with them!

Corn Pops yo!
Now unwrap these babies! Try not to eat them yet…you need them all!
Caramel Corn Pops Bars
Print RecipeIngredients
- 1 (12.5 ounce) box Kellogg's Corn Pops Cereal
- 1 (11 ounce) package Kraft Caramel Squares
- 1 cup unsalted butter
- pinch of salt
- 1 teaspoon vanilla extract
Instructions
Line a 13x9-inch baking pan with foil and spray with baking spray. Set aside. Unwrap all of your caramels and gather the remaining ingredients and get them in place and ready to go.
Use a large pot or dutch oven (big enough to accommodate the entire box of Corn Pops, leaving enough room to be able to stir the mixture in the pot) and place the butter, all of the caramels and salt into the pot. Heat the mixture over medium heat on the stove top, stirring until butter is incorporated into the caramels and the mixture is smooth.
Remove from the stove and add the vanilla extract in the caramel mixture and stir. Add the entire bag of Corn Pops (save the cereal bag for the next step!) to the caramel mixture and stir to fully incorporate the caramel mixture onto the Corn Pops.
Pour the mixture into your prepared pan and use the cereal bag to gently push the mixture into the pan.
Let cool completely before cutting into desired squares.
Notes
Store at room temperature in an airtight container.
