Chocolate chip cookie dough, with the addition of caramel flavoring and caramel bits and baked into soft and thick bars. Easy recipe made in an 8×8-inch pan, but can also easily be doubled!
To give these extra caramel flavor, besides the caramel bits, I added Dolce Flav Caramel Flavoring. Their flavorings are highly concentrated, so if you are using a regular caramel extract or emulsion then use 1 teaspoon. Or you can make these with just vanilla extract, but use a total of 1-1/2 teaspoons.

- 1/2 cup unsalted butter, room temperature
- 1/2 cup white granulated sugar
- 1/2 cup light brown sugar, packed
- 1 egg, room temperature
- 3/4 teaspoon vanilla extract (I used Rodelle Madasgarcar Bourbon Vanilla Extract)
- 1/8 teaspoon Dolce Flav Caramel Flavoring
- 1-1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon cornstarch
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup semi-sweet chocolate chips
- 1/2 cup caramel bits (I used Kraft brand)
Instructions
Preheat oven to 350-degrees. Line the bottom of an 8x8-inch bake pan with parchment paper or foil, spray the sides and bottom of the dish with baking spray and set aside.
In the bowl of a stand mixer, affixed with the paddle attachment, add the butter and both sugars. Mix on medium-high speed until the mixture is light and fluffy. Add the egg and vanilla extract and caramel flavoring. Mix until fully combined.
Change the mixer to low speed and add the flour, salt, cornstarch, baking soda and baking powder. Mis until just combined. Remove the bowl from the mixer and use a rubber scraper to ensure all the ingredients are fully incorporated. Fold in the chocolate chips and caramel bits.
Pour dough into prepared dish and evenly distribute the dough into the pan (wet your fingers slightly to push the dough evenly into the pan). Bake the cookie in a 350-degree oven for 15-20 minutes or until the edges are a light brown and the middle doesn't jiggle. Do not over bake though. Remove from the oven and set on a wire rack to cool completely.

Store in an airtight container at room temperature.
