Caramel Butterscotch Corn Pops Bars

Butter, creamy caramels, Corn Pops cereal and butterscotch chips all come together to form a rich and decadent no bake cereal treat.  

You can use the individually wrapped Kraft Caramel Squares, or Kraft Caramel Bits.  Both work the same.

Caramel Butterscotch Corn Pops Bars

Serves: 15-20 Cooking Time: 4-5 minutes

Ingredients

  • 1 cup unsalted butter
  • 1 (11-ounce) bag Kraft Caramel bits or squares
  • 2 teaspoons vanilla extract (I used Rodelle Baker's Extract)
  • 1/2 cup butterscotch chips
  • pinch of salt
  • 6 cups Corn Pops Cereal

Instructions

Line a 13x9-inch baking pan with foil and spray with baking spray. Set aside. Unwrap all of your caramels (if using the caramel squares and not the bits).

In a large pot on the stovetop over medium high heat, place the butter and the entire bag of caramel bits or unwrapped caramel squares, into the pot. Heat the mixture, stirring occasionally, until butter is incorporated into the caramels and the mixture is smooth.

Remove from the stovetop and stir in the vanilla extract, butterscotch chips and salt. Stir in the 6 cups Corn Pops cereal. Pour the mixture into your prepared pan and gently push the mixture evenly into the pan.

Let cool completely before cutting into desired squares.

    I love the way you started the post with 2 sticks of butter:) Anything that begins with 2 sticks of butter has got to be good!!! This is such a lovely holiday gift/snack and corn pops being one of my kids favorite cereal, this is gonna be our favorite too.

    Your pictures are always so good that I had to go back and check out your old blog post. Your new pictures are actually better. It is fun to see the improvement in such a short time, isn’t it? I do like the butterscotch chips added in. These sound delicious.

    Kelly these look just so yum, I loooove caramel and butterscotch and in these bars, just perfect. It will make delicious little gifts too, might be a bit too difficult share though because I will keep them all to myself 😋

    I remember the CORN POP commercials but I have to admit, I have NEVER had Corn Pops before in my life. But hot damn, if I could, I would devour the CRAP out of them – especially in THISSSSSSS recipe!

    Omggggg how on earth did you manage to make Corn Pops even better than it already is??? Cereal bars are a serious weakness of mine, and I am always on the lookout for new ones to try – this one is definitely going at the top of my list!

    Is this supposed to have 2 sticks of butter or 2 cups? It was really hard to get the Carmel and 2 cups to mix together.

      Hi Sara! I am so sorry….the recipe is supposed to have one cup of butter (2 sticks). I just fixed the recipe. It does take some stirring to get the caramel to incorporate into the caramel. Aghhh. So sorry for my error when writing the recipe.
