Caramel Apple Cookies

A brown sugar cookie dough with the addition of caramel flavoring, caramel bits and pieces of freeze dried apples. These cookies are like a caramel apple, but as a cookie!

I used freeze dried apples in these cookies because using fresh apple will add too much extra moisture to your cookies. You can use dehydrated apple or freeze dried. My friend sells freeze dried fruits, vegetables and candies and gave me these freeze dried apples to try, so of course I was going to use them to make a fun recipe!

Caramel Apple Cookies

Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 2/3 cup light brown sugar
  • 1/4 cup white sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon caramel flavoring
  • 2 egg yolks
  • 1-1/3 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1-1/2 teaspoons cornstarch
  • 1/3 cup freeze dried apple pieces
  • 1/2 cup caramel bits
  • TOPPING:
  • 3 tablespoons white sugar
  • 1/2 teaspoon ground cinnamon

Instructions

Preheat oven to 350-degrees and line a large cookie sheet with parchment paper and set aside.

In a large bowl mix together the butter, brown sugar, white sugar, vanilla extract and caramel flavoring. Mix until combined. Stir in the egg yolks. Stir in the flour, cinnamon, nutmeg, baking soda, salt and cornstarch and mix until just combined. Fold in the freeze dried apple pieces and caramel bits.

TOPPING: in a small bowl combine the cinnamon and sugar.

Use a standard sized cookie scoop to scoop cookie dough balls, roll them in the topping and then place onto prepared cookie sheet. Leave a few inches between the dough balls. Bake cookies in 350-degrees for 9-12 minutes, depending on your desired cookie doneness.

Let cookies set on cookie sheet for 5-minutes before transferring to a wire rack to cool completely

Notes

Store in an airtight container at room temperature. Cookies stay fresh for 5-7 days.
