Cap’n Crunch cereal treats with the addition of butterscotch chips (or white chocolate chips), to make the most amazing cereal treats! The butterscotch chips melt into the hot butter-marshmallow mixture, pairing perfectly with the slightly sweet flavor of the Cap’n Crunch cereal.
Here’s a tip for making light and fluffy cereal treats: when pressing the mixture into the pan to set, do so gently. Barely spread the mixture into the pan.
If you press the mixture down too firmly, you will get hard, dense treats.
Cap'n Crunch Cereal Treats
Print RecipeIngredients
- 1/2 cup unsalted butter
- 1 (16-ounce bag) mini marshmallows, divided
- 1/3 cup butterscotch chips ( or white chocolate chips)
- 1 teaspoon vanilla extract (I used Rodelle Baker's Extract)
- 1/2 teaspoon salt
- 6 cups Cap'n Crunch cereal
- 2 cups crispy rice cereal
- sprinkles
Instructions
Line a 9x13-inch pan with foil and spray the bottom and sides with baking spray and set aside. In a large pot, on the stovetop over medium heat, melt the butter. Once the butter has melted, add the marshmallows, reserving 1/2 cup of marshmallows for later. Stir the mixture until the marshmallows are completely melted. Remove from the stove.
Immediately stir in the butterscotch chips, vanilla extract and salt. Stir until the butterscotch chips are mostly melted and the ingredients are combined. Stir in the Cap'n Crunch and crispy rice cereal one cup at a time. Fold in the 1/2 cup of mini marshmallows.
Pour the mixture into the pan and press gently into an even layer. Option to add sprinkles on top.
Allow treats to set and cool in the pan before cutting into squares.
Notes
Store treats at room temperature in an airtight container. Treats stay fresh for several days.
