Waffle cookies made from leftover cake batter! Ever have leftover cake batter from making cupcakes or cake, and didn’t know what to do with it? It’s a shame to throw away that goodness. So don’t!! Put that batter in your waffle maker, for a yummy treat (that you can eat while your cupcakes are baking)! And if you don’t have any leftover batter, I have included a recipe that you can make so you can have waffle cookies too.
Sometimes I only need a certain number of cupcakes, or I know I won’t have enough frosting to cover additional cupcakes, so I end up with leftover cake batter. Which happened to me the other day. I had heartache throwing the batter away, so sitting there, starring at the leftover batter, I thought “why not put the batter in the waffle maker and see what happens?” Oh it’s awesome. Totally worth digging the waffle maker out for!
Make sure you grease your waffle maker on both sides!
I used a standard sized cookie scoop to scoop batter into each square.
Cake Batter Waffle Cookies

- 5 tablespoons unsalted butter, softened
- 3/4 cup white granulated sugar
- 1 egg, room temperature
- 3/4 teaspoon vanilla extract
- 1-1/4 cups all-purpose flour
- 1-1/4 teaspoons baking powder
- 1/4 teaspoon nutmeg
- pinch of salt
- 1/2 cup plus 2 tablespoons milk (I used whole milk), room temperature
- 1/2 cup mini chocolate chips, optional
Instructions
With the paddle attachment affixed to your stand mixer, add the butter and sugar and mix until creamy. Add the egg and vanilla extract, and mix until incorporated.
Change the mixer to low speed and slowly add the flour, baking powder, nutmeg and salt. Mix until just combined. With the mixer on low, slowly add the milk into the mixture and mix until incorporated. Mix batter on medium speed until all ingredients are incorporated and there are no lumps in the batter. Fold in the chocolate chips.
Grease waffle maker on both sides (I used baking spray) and turn on the medium heat setting. Once waffle maker is done heating up, add batter to the middle of each waffle grid. Amount of batter you use will depend on the waffle maker you have. Close waffle maker and let waffle cookies bake until golden brown.
Remove waffle cookies from the waffle maker and let cool on a wire rack. Continue the waffle cooking process until you have used all the cake batter.
Dust with powdered sugar if desired. Waffle cookies are good fresh from the waffle maker or served later, cold!
Notes
Store waffle cookies at room temperature in an air tight container.
Those are mini chocolate chips you see in my waffle cookies!
