Classic scone recipe, but with the addition of dry cake mix and cake batter flavoring. Scones are iced with a cake batter glaze and topped with sprinkles!
I love making scones of any variety. And when I received Cake Batter Flavoring from Dolce Foglia, I knew I wanted to use it to make a fun twist on scones! And the flavoring is spot on cake batter flavor!
Cake Batter Scones

- SCONES:
- 1 egg, beaten
- 1 tablespoon vanilla extract
- 1/2 teaspoon cake batter flavoring
- 1/2 cup heavy cream
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/8 teaspoon ground nutmeg
- 6 tablespoons white granulated sugar
- 1 tablespoon dry cake mix (I used Funfetti flavored)
- 1/2 cup cold, unsalted butter, cubed
- CAKE BATTER ICING:
- 1 tablespoon melted butter
- 2 cups powdered sugar
- 1 tablespoon milk or heavy cream
- 1/2-1 teaspoon cake batter flavoring
- 2-3 tablespoons warm water
- Food coloring of your choice (optional)
- Sprinkles
Instructions
SCONES: In a small bowl, whisk together the egg, vanilla extract, cake batter flavoring and heavy cream. Let mixture sit while you prepare the dry ingredients.
Sift the flour, baking powder, salt, nutmeg, sugar and dry cake mix in a large bowl. Use a pastry cutter to cut the cold butter into the flour mixture. Stir the wet ingredients into the dry and mix until just combined. Dump the scone dough on a piece of parchment paper and pat into an 8-inch circle, approximately 1-1/2 inches high. Place in the refrigerator to chill for at least one hour or cover overnight.
Once chilled, preheat oven to 375-degrees. Cut the circle into 8 pie shaped slices and transfer to a cookie sheet lined with parchment paper or to a scone pan sprayed with baking spray.
Bake in 375-degree oven for 22-25 minutes or until the sides and top are slightly golden brown. Remove from oven and let set for 10-15 minutes. Once set, transfer to a wire rack to finish cooling.
Once scones have cooled and you are ready to serve them, prepare the cake batter icing.
CAKE BATTER ICING: in a medium sized bowl, combine the melted butter, powdered sugar, milk, cake batter flavoring and water (and food coloring if using). Add more water or powdered sugar to reach desired consistency.
Use a spoon to spread the icing on top of each scone and immediately add sprinkles. Let the icing set for 2-3 hours before storing.
Notes
Store scones in an airtight container at room temperature for 3-4 days.
