Rice Chex marshmallow treats with the rich flavors of butterscotch and toffee, for an easy no-bake cereal treat! I was inspired by the classic Scotcheroo recipes using Rice Chex, but wanted to make a version that was free of peanut butter and corn syrup. These treats are rich and decadent and take just minutes to make!
Butterscotch Toffee Rice Chex Treats

- 1/2 cup unsalted butter
- 1 (16-ounce) bag mini marshmallows, divided
- 1 cup butterscotch chips
- 1/3 cup white chocolate chips
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract (I used Rodelle Bakers Extract)
- 5 cups Rice Chex cereal
- 1 cup chopped toffee or Heath Baking Bits
- 1/4 cup semi-sweet chocolate chips
Instructions
Line a 9x13-inch baking pan with foil and spray the bottom and sides of the pan with baking spray. In a large pot on the stovetop over medium-high heat, add the butter. Melt the butter. Once the butter is melted, add the mini marshmallows, reserving one cup of marshmallows. Stir constantly until marshmallows are completely melted and the butter and marshmallows are completely incorporated.
Remove the pan from the heat. Add the butterscotch chips and white chocolate chips immediately and stir until melted completely into the marshmallow-butter mixture. Stir in the vanilla extract and salt. Stir in the Rice Chex cereal one cup at a time. Fold in the remaining cup of mini marshmallows and toffee. Stir until incorporated.
Pour mixture out into prepared pan and sprinkle the semi-sweet chocolate chips on top. Let cereal treats cool and set completely before cutting into desired sized squares.
Notes
Store at room temperature in an airtight container.
The B. toffee I used in these treats are topped with pecans, which were a nice addition in these super-sweet treats. Use your favorite toffee or Almond Roca though. You can also use Heath Baking Bits.
