Rice crispy cereal, corn flakes cereal and butterscotch chips (and of course marshmallows!) make up these cereal treats. I like the mix of the rice crispy cereal and corn flakes cereal, but you can use all corn flakes or all rice crispies!
Butterscotch Cereal Treats

- 1/2 cup unsalted butter
- 1 (16-ounce bag) mini marshmallows, divided
- 3/4 cup butterscotch chips
- 1 teaspoon vanilla extract (I used Rodelle Baker's Extract)
- 1/2 teaspoon salt
- 5 cups corn flakes cereal
- 3 cups crispy rice cereal
Instructions
Line a 9x13-inch pan with foil and spray the bottom and sides with baking spray and set aside. In a large pot, on the stovetop over medium heat, melt the butter. Once the butter has melted, add the marshmallows, reserving 1/2 cup of marshmallows for later. Stir the mixture until the marshmallows are completely melted. Remove from the stove.
Immediately stir in the butterscotch chips, vanilla extract and salt. Stir until the butterscotch chips are mostly melted and the ingredients are combined. Stir in the corn flakes cereal and crispy rice cereal one cup at a time. Fold in the remaining 1/2 cup of mini marshmallows.
Pour the mixture into the pan and press gently into an even layer. Allow treats to set and cool in the pan before cutting into squares.
Notes
Store treats in an airtight container at room temperature.
