Serves: 6 Cooking Time: 10-minutes

Ingredients

  • DONUT BATTER:
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 1/2 cup light brown sugar, packed
  • 1 egg, room temperature
  • 1-1/3 cups all-purpose flour
  • pinch of salt
  • 1/8 teaspoon baking soda
  • 3/4 teaspoon baking powder
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup milk (I used unsweetened vanilla almond milk)
  • BROWN SUGAR GLAZE:
  • 2 tablespoons melted butter
  • 1-1/2 cups powdered sugar
  • 2 tablespoons light brown sugar
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 2-4 tablespoons hot water
  • TOFFEE TOPPING:
  • 1/2 cup finely chopped toffee or Heath baking bits
  • sprinkles

Instructions

1

Preheat oven to 425-degrees. Spray a donut pan with baking spray and set aside.

2

PREPARE DONUT BATTER: In a medium sized mixing bowl, add the butter and oil and brown sugar. Stir until combined and creamy. Stir the vanilla extract into the sugar mixture. Add the egg and stir until combined with the sugar mixture. Add the flour, salt, baking soda, baking powder and nutmeg to the wet ingredients. Stir slowly while adding the milk to the mixture. Mix until just combined.

3

Spoon batter into each donut cavity, only filling 2/3 of the way full.

4

Bake in 425-degree oven for 10-minutes. Remove the donut pan from oven, and once donuts have somewhat cooled and set, transfer the donuts to a wire rack to finish cooling.

5

PREPARE GLAZE: In a small bowl, melt the butter. Add the powdered sugar and brown sugar to the melted butter and stir. Stir in the hot water a tablespoon at a time to the mixture, until you reach your desired consistency. Stir in the vanilla extract and salt. Dunk the tops of the cooled donuts in the glaze and immediately top with finely chopped toffee and sprinkles.

Notes

Store donuts in an air tight container at room temperature.

OMG yes!! These doughtnuts sound amazeballs, Kelly! I just love the sound of that glaze and delicious toffee topping. I really need to find those toffee pieces here in Canada, they sound great! I also love the molasses flavour glaze, they sound right up my alley (I put molasses in my coffee so I’m a huge fan! haha). I hope your surgery went okay, chika and that you are feeling much better. I’m pretty sure these donuts will help big-time! (or it doesn’t hurt to try, anyway lol). At least you have some down-time to come up with new recipes, I have a feeling once you’re feeling better we’ll have so many more scrumptious recipes coming our way soon. Sending healing vibes and energy your way for a speedy recovery, my friend! xo
