A made from scratch brown sugar cupcake, frosted with homemade vanilla buttercream and topped with pieces of toffee! This recipe is so easy, and not like any box mix you can buy at the store. We are also celebrating #CupcakeMondays again, so at the end of this post, there’s even more fabulous cupcake recipes from my blogger friends.
This cupcake is completely inspired by the B. toffee that the company owner, Betsy, sent me. I have used her delicious toffee to create several recipes here on the blog, and they are always favorites of those that get to taste my treats. B. toffee is different in that it has a nice crunch and doesn’t get stuck in your teeth! So what better pairing than brown sugar cupcakes topped with toffee?!
But before we get to the toffee, we need to bake our cupcakes….
Brown Sugar Toffee Cupcakes

- CUPCAKES:
- 1-2/3 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- pinch of ground nutmeg
- 1 cup dark brown sugar, packed
- 1/2 cup unsalted butter, melted
- 1 egg, room temperature
- 1/4 cup vanilla greek yogurt
- 3/4 cup milk (I used unsweetened vanilla almond milk)
- 1 tablespoon vanilla extract (I used Rodelle Baker's Extract)
- VANILLA BUTTERCREAM FROSTING:
- 1 cup unsalted butter, cold and cut into chunks
- 3-1/2 cups powdered sugar
- 1/4 cup heavy whipping cream
- 3 teaspoons vanilla extract (I used Rodelle Baker's Extract)
- pinch of salt
- TOPPING:
- 1 cup chopped B. toffee
Instructions
CUPCAKES: Preheat oven to 350-degrees and line two cupcake tins with 16 cupcake liners. In a medium sized bowl, whisk together the flour, baking powder, baking soda, salt and nutmeg. In a large bowl, mix vigorously by hand the dark brown sugar and melted butter. Once completely incorporated, stir the egg into the butter-sugar mixture. Stir in the greek yogurt. Slowly stir in the milk and vanilla extract. Stir in the dry ingredients, mixing only until there are no lumps.
Fill cupcake liners 2/3 full of batter (batter will be thin). Bake cupcakes, one cupcake tin at a time, in 350-degree oven for 20-minutes, or until a toothpick inserted in the middle comes out with raw batter on it.
Remove cupcakes from the oven and remove cupcakes from the tin. Place cupcakes on a wire rack to cool. Let cupcakes cool completely before frosting.
FROSTING: In the bowl of a stand mixer, affixed with the paddle attachment, add the cold butter and mix on medium-high for 3-minutes, scraping down the sides of the bowl as needed. Change the mixer to low speed and add the powdered sugar, heavy whipping cream, vanilla extract and salt. Once incorporated, change the mixer to medium-high speed and mix for 3-minutes, until light and fluffy. Use desired pastry tip in a pastry bag, to frost cooled cupcakes. Top with chopped toffee or toffee bits.
Notes
Store cupcakes at room temperature in an airtight container.
