Bisquick Chocolate Chip Cookies

Thought you could only use Bisquick to make pancakes?!  Oh no, no, no….you can use Bisquick for so many things!  Including these quick and easy chocolate chip cookies.  These are still chocolate chip cookies made from scratch.  We are just making things a little easier by using Bisquick instead of flour.

Bisquick reminds me of my childhood and my mom making us pancakes on the weekends.  I don’t think I can ever look at a box of Bisquick and not think of my mom!  I haven’t had Bisquick pancakes for years, but I bought a whole box of Bisquick to use in a recipe (coming soon).  With an opened box of Bisquick in the pantry, I had a hankering for cookies which is why we now have these Bisquick Chocolate Chip Cookies!

Are you familiar with Bisquick?  If not, all Bisquick is, is a boxed baking mix of flour and leavener.  So you will see in the recipe below, that we don’t need to add any baking soda or baking powder to our dough.  And these cookies taste just like your regular, from-scratch chocolate chip cookies (and don’t require any chilling in the refrigerator before baking either)!

Oh and I added sprinkles to the dough and then rolled the cookie dough balls in even more sprinkles.  Just because sprinkles are pretty.  The sprinkles in these cookies are optional (???), so you could also just roll the cookie dough balls in granulated sugar before baking, or leave them plain.  Your choice!

Bisquick Chocolate Chip Cookies

Serves: 25 Cooking Time: 9-11 minutes

Ingredients

  • 6 tablespoons unsalted butter, room temperature
  • 1/3 cup white sugar
  • 2/3 cup light brown sugar, packed
  • 2 teaspoons vanilla extract
  • pinch of ground nutmeg
  • pinch of salt
  • 1 egg, room temperature
  • 2-3/4 cups Bisquick
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup sprinkles (optional)
  • TOPPING:
  • 1/4 cup sprinkles or 1/4 cup white granulated sugar

Instructions

Preheat over to 375-degrees. Line two cookie sheets with parchment paper. Set aside.

In the bowl of a stand mixer, affixed with the paddle attachment, add the butter, white sugar and brown sugar. Mix on medium-high speed until light and fluffy. Scrape down the sides of the bowl as needed. Add the ground nutmeg, salt, add egg and mix until combined. Add in the Bisquick, mixing until just combined. Remove the bowl from the mixer and fold in the chocolate chips and sprinkles.

Use a standard sized cookie scoop to scoop cookie dough balls. Drop balls into a small bowl of sprinkles or sugar and roll the dough balls in the until covered. Place cookie dough balls, two inches apart, on prepared cookie sheets.

Bake cookies, one cookie sheet at a time, in 375-degree oven for 9-11 minutes. Remove baked cookies from the oven and let set for several minutes on the cookie sheet, before transferring cookies to a wire rack to finish cooling completely.

Notes

Store cookies in an airtight container at room temperature. Cookies stay fresh for several days.

    I do love bisquick. I use it to make quick dumplings all the time for soup or chicken and dumplings. I love the look of sprinkles but not the taste so roll mine in sugar please. Or actually just give me the dough.

    Bisquick oven baked chicken and impossible cheeseburger pie. I have a 1970s Bisquick cookbook full of marvelous recipes, but never thought to do COOKIES. That’s brilliant! Thanks for sharing this yummy recipe!

    whoa would have never thought to use bisquick in cookies! i have done cake mix in cookies though, and that’s really tasty (: love the idea of rolling the cookies in sprinkles. i bet it adds such an awesome crunch!

    I love how you make desserts out of things that I would never think of making into a dessert. I am anxious to try this recipe and to share it with my two daughters. Bisquick is right down their alley!
