Sugar cookie bars flavored to taste like birthday cake by adding dry cake mix and birthday cake flavoring to the batter.
These sugar cookie bars are simple to make and are SO GOOD. They taste like birthday cake, but in cookie form. These bars are soft and sweet and fun with the added sprinkles!
For the birthday cake flavoring, I used Dolce Foglia. A tiny bit goes a long ways because their flavors are so concentrated. And I used Funfetti cake mix as the dry cake mix added into the batter, but you could use any flavor dry cake mix.

- 1/2 cup unsalted butter, room temperature
- 3/4 cup white granulated sugar
- 1 egg plus one yolk, room temperature
- 2 teaspoons vanilla extract
- 1/4 teaspoon birthday cake flavoring
- 1-1/2 cups all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cornstarch
- 1/2 teaspoon salt
- 1/4 cup dry cake mix
- 1/2 cup white chocolate chips
- 2 tablespoons sprinkles
Instructions
Preheat oven to 350-degrees. Line an 8-inch X 8-inch baking pan with foil or parchment paper and spray with baking spray. Set aside.
Using an electric mixer, cream together the butter and sugar on medium-high. Once creamed together, add one whole egg and the one egg yolk. Mix until combined. Add the vanilla extract and birthday cake flavoring. Mix until combined.
Change the mixer speed to low and add the flour, baking powder, baking soda, cornstarch, salt and dry cake mix into the wet ingredients. Mix until just combined.
Use a rubber scraper to fold in the white chocolate chips and sprinkles. Dump the cookie dough into the prepared pan, pressing into an even layer.
Bake in 350-degree oven for 25-27 minutes. Bake until the center is set and not raw. The edges should be a light brown and no raw batter on a toothpick when inserted in the middle. Bars continue to bake as they set, so do not over bake.
Remove from oven and allow bars to set in the pan for 2-3 hours until cutting into desired sized bars.
Notes
Cookies stay fresh for 4-5 days at room temperature in an airtight container.
