How do you make a no bake cookie taste like a birthday cake?! Well read on to find out! This is another easy no bake cookie recipe that would be perfect for any party…or late night snack. Plus if you need a quick dessert to whip up, no bake cookies are always a great idea.
After making the Butterscotch No Bake Cookies awhile back, I told James I wanted to make a Vanilla No Bake Cookie, and use white chocolate chips, instead of the butterscotch chips I used in the Butterscotch No Bakes. James isn’t much of a white chocolate fan— that’s a love or hate kind of food— so James asked me if I could make a no bake cookie that tasted like birthday cake. Yessssssss.
So after a little kitchen experimentation, and a few different batches to get the recipe just right, I have for you a no bake cookie that tastes like birthday cake!! The first trial run in making these cookies yielded an EXTREMELY sugary cookie, and you could taste the white chocolate in them. Not what I was going for. So with the changes I made in the second batch, I was pretty excited about the taste and flavor. There’s white chocolate in these cookies, but you can’t taste it in this recipe. Trust meeeeeeeee! It’s straight up birthday cake flavor 🙂
Birthday Cake No Bake Cookies

- 1/2 cup unsalted butter
- 1/2 cup unsweetened vanilla almond milk
- 1 cup white granulated sugar
- 1 teaspoon vanilla bean paste (or vanilla extract)
- 3/4 cup white chocolate chips
- pinch of salt
- 1/3 cup dry Funfetti cake mix
- 2-1/2 cups quick cooking oats
- 1/4 cup sprinkles, plus more for sprinkling on top
Instructions
Lay a strip of foil or parchment paper on the counter to drop your cookies on after they have cooked.
In a medium sized pot, on medium high heat on the stovetop, add the butter, almond milk and sugar to the pot. Stir occasionally. Just as the mixture comes to a boil, set the timer for 1-minute. Stir the mixture continuously as it boils for the minute. After the minute is up, remove the pot from the stove.
Immediately add the vanilla bean paste or extract, the salt and the white chocolate chips. Stir the mixture several times until the white chocolate chips start to melt. Stir in the dry Funfetti cake mix and a cup of oats. Stir until combined. Add the additional 1-1/2 cups of oats to the mixture, stirring until well combined. Wait a moment before adding the sprinkles to the mixture, or they will melt.
Scoop desired sized cookies onto foil or parchment paper and immediately top with additional sprinkles. Let cookies set.
Notes
Store cookies in an airtight container at room temperature. Cookies stay fresh for 3-4 days.
The addition of more sprinkles on top of the cookies is TOTALLY necessary!
