The best chocolate cake. And if you make it, I am confident you will agree. This is a super moist, super chocolatey cake that is sure to please my chocolate lovers out there! Buttermilk and coffee are just two of the ingredients in this cake that make this cake amazing! Box mix just does not compare…and read on to hear about my exciting news!!
I have a secret to tell you. I don’t like cake. I know. The horror, right? I like cookies and brownies. So when my birthday comes around, I usually make myself a nice, thick cookie cake!!!! But as much as I don’t like cake, this cake gets me EVERY time. The rich, chocolate smell of the baked cake always makes me just want to face plant right into it and eat all the cake! I think this cake would convert a chocolate cake hater into a chocolate cake lover. Maybe?

Okay….let’s get baking!
This cake is easy to mix up and you have pan options too…bake in a 9 x 13-inch baking pan or divide the batter equally into two 9-inch round cake pans. Both take about the same bake time, but always keep an eye on your cake. You don’t want to over bake a chocolate cake!
The BEST Chocolate Cake

- 1-3/4 cup all-purpose flour
- 1-3/4 cup white granulated sugar
- 3/4 cup unsweetened cocoa powder (I used Rodelle Gourmet Cocoa Powder)
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 1/4 teaspoon ground nutmeg
- pinch of salt
- 1 cup buttermilk, room temperature
- 1/2 cup canola oil
- 2 eggs, room temperature
- 2 teaspoons vanilla extract (I used Rodelle Bakers Blend)
- 1 cup freshly brewed, hot strong coffee
Instructions
Preheat oven to 350-degrees. Line the bottom of a 9x13-inch pan or two 9-inch round pans with parchment paper and spray the sides of the pan with baking spray. Set aside.
In a medium bowl, place a sifter in the middle of the bowl and add the flour, sugar, cocoa powder, baking powder, baking soda, salt and nutmeg to the sifter. Sift the dry ingredients into the bowl and set aside.
In the bowl of a stand mixer, affixed with the paddle attachment, add the buttermilk, oil, eggs and vanilla extract into the bowl. Mix on medium speed until ingredients are fully incorporated. Change the mixer to low speed and slowly add the dry ingredients into the wet ingredients. Mix until incorporated. Slowly add the hot coffee into the cake batter, mixing until combined.
Remove the bowl from the mixer and use a rubber scraper to ensure all ingredients are incorporated. Pour batter into prepared cake pan. Bake cake in 350-degree oven for 24-minutes or until a toothpick inserted into the middle comes out without raw batter on it.
Place cake on wire rack to cool. Once cake is cool, frost with desired frosting.
Notes
This cake freezes well. Once the cake is cool, wrap the cake tightly in plastic wrap and the wrap completely in foil. Place in freezer to freeze. When ready to defrost the cake, remove the cake from the freezer, place on the counter and remove the foil and open the plastic wrap up to allow the cake to defrost without getting mushy.
One recipe note: I used dutch processed cocoa powder in my cake, which yields a deeper, rich chocolate flavor. I wrote the recipe using natural, unsweetened cocoa powder because that is what most people keep on hand. If using dutch processed cocoa (alkalized), use 2 teaspoons baking powder and 1/2 teaspoon baking soda instead.
I can still smell this chocolate cake cooling on my counter….mmmmmm.
Chocolate Cake can be frosted with almost any flavor of frosting! I have made this cake and frosted it with my Peanut Butter Cream Cheese Frosting, Vanilla Buttercream Frosting and this cake was frosted using my Mocha Chip Buttercream Frosting (those are chocolate shavings you see in the frosting!!!).

This is my tried and true chocolate cake. It is nothing short of amazing, and I have made it more than any other recipe, so I am super excited to share it with you today.

February 25, 2018 at 6:50 AMI’m definitely not a recipe snob, got it from a cookbook…Ovenly. The cake is made with butter, making it denser than one made with oil. I love the texture, it has a nice chew. As far as the beer goes, I’ve used many different kinds of stout, mostly ones made with chocolate and/or espresso beans. Although, if the cake is being decorated with a peanut butter design (like PB cups and/or PB buttercream) I’ll use something like Sweet Baby Jesus Chocolate Peanut Butter Porter. I’ve also used a mint beer when my son requested a mint chocolate cake, I made the buttercream with crushed mint Oreo Cookies!

I usually use natural, unsweetened cocoa powder; however, when I’ve had both in the cupboard before, I didn’t know that I needed to make accommodation for the substitution.

You can use natural unsweetened cocoa interchangeably with dutch processed if there isn’t any baking soda or baking powder in the recipe (perfect for some brownies, frostings, ice cream, etc). But if swapping out one for another, you have to adjust the baking soda or baking powder too avoid too much baking soda with dutch processed cocoa, which can make it taste soapy. Hopefully that made sense!

I used to HATE cake as a kid and always asked for ice cream cake, apple pie or cheesecake for my birthday but one year my next door neighbor made a chocolate cake with a thick mocha frosting; it was the addition of the coffee that got me and I LOVED that cake.
