Banana Chocolate Chip Cookies

Classic chocolate chip cookies, but with a sweet hint of banana throughout.  All you need is one ripe banana to make this recipe, so if you have one lonely, ripe banana that needs a use, then you need to make these cookies!

A couple recipe notes…this recipe uses only four tablespoons of butter and no eggs!  I made large cookies, but you can always make standard sized cookies and bake for 9-11 minutes instead.

Banana Chocolate Chip Cookies

Serves: 7 large cookies Cooking Time: 13-14 minutes

Ingredients

  • 4 tablespoons unsalted butter, room temperature
  • 1/3 cup mashed, ripe banana (approximately one banana)
  • 1/2 cup light brown sugar, packed
  • 1/3 cup white sugar
  • 2 teaspoons vanilla extract (I used Rodelle Baker's Extract)
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground nutmeg
  • 1-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1 cup chocolate chips (I used milk chocolate)

Instructions

In the bowl of a stand mixer, with the paddle attachment affixed, add the butter, banana, brown sugar and white sugar. Mix on medium-high until the ingredients are thoroughly combined. Change the mixer to low and add the vanilla extract, salt and nutmeg. Mix until combined.

With the mixer on low, add the flour, baking soda and cornstarch. Mix until barely combined. Remove the bowl from the mixer and use a rubber scraper to ensure all the ingredients are incorporated. Fold in the chocolate chips.

Line a large cookie sheet with parchment paper or a baking mat. Use a 1/4-cup scoop to scoop seven cookie dough balls and drop the cookie dough balls onto the prepared cookie sheet. Place cookie dough balls in the refrigerator to chill for one hour before baking.

Once cookie dough has chilled, preheat oven to 350-degrees and bake cookies for 13-14 minutes or until the edges are lightly browned. Remove from oven and let cookies set on the cookie sheet for 10-minutes before transferring to a wire rack to finish cooling.

Notes

Store cookies in an air tight container at room temperature. Cookies stay fresh for several days.

    Kelly – Ii love this recipe! the cookies are gorgeous and I imagine the banana flavor with chocolate chips is awesome!

    These cookies look and sound absolutely lovely – loving the addition of banana! Now, this recipe made me think of making banana ice cream with chocolate and perhaps some cookie chunks. Thanks for the inspiration! 🙂
