Banana Blondie Bars with Banana Icing

All you need is one lonely, ripe banana to make these blondie bars that are rich in banana and brown sugar flavor and topped with a light banana flavored icing.  With one banana left after making banana bread recently, I decided to put that banana to good use and throw it in a blondie recipe!  These blondies are kind of like if a blondie and a piece of cake had a baby.  A banana baby.

I love making blondies because they are SO easy to make andI always have the ingredients on hand!  I almost feel like because there’s a banana in these, you could eat these for breakfast too??  Maybe that’s just me.  But make sure your bananas are good and ripe…I wait until they are almost black before I use them in recipes.

TIP: If you need to ripen bananas quickly, place whole bananas (in their peels) on a baking sheet and bake in a 300-degree F oven for 25-30 minutes.  Bananas will turn black, but don’t worry!  That’s what we want!  Just let bananas cool completely before using in the recipe.

Banana Blondie Bars with Banana Icing

Ingredients

  • BANANA BLONDIES:
  • 1/2 cup unsalted butter, slightly melted
  • 1 cup light brown sugar
  • 1 egg, room temperature
  • 2 teaspoons vanilla extract (I used Rodelle Gourmet Vanilla)
  • pinch of salt
  • pinch of nutmeg
  • 1 cup all-purpose flour
  • 1/2 cup mashed banana (one medium banana)
  • ICING:
  • 1-1/2 cups powdered sugar
  • 2 tablespoons melted butter
  • 1 tablespoon light corn syrup
  • 1-1/2 teaspoons banana extract
  • 1-2 tablespoons hot water
  • Sprinkles, optional

PREPARE BLONDIES: Preheat oven to 350-degrees. Line an 8x8-inch baking pan with foil and spray the bottom and sides with baking spray. Set aside.

In the bowl of a stand mixer, affixed with the paddle attachment, mix together on medium-high speed the butter and brown sugar, until light and fluffy. Mix in the egg and the vanilla extract. Add the salt, nutmeg and flour and mix on low speed until just combined. Remove the bowl from the mixer and fold in the mashed banana.

Pour the mixture in an even layer in the prepared pan and bake in 350-degree oven for 25-30 minutes (until middle is set). Remove from the oven and let set in the pan until completely cooled. Once cool, prepare the icing.

ICING: In a medium bowl, mix together the powdered sugar, melted butter, corny syrup, banana extract and hot water. Add more powdered sugar for a thicker consistency or more water to thin out the icing. Icing should be semi-thick, but easily spreadable. Spread an even layer of icing over cooled blondies and add sprinkles. Let icing set for 2-3 hours before slicing into bars.

Notes

Store blondies at room temperature in an air tight container. Blondies will stay fresh for up to one week.
