Baked Cinnamon Sugar Donuts

Baked Cinnamon Sugar Donuts that are gluten free, dairy free, sugar free and nut free. The perfect allergy friendly, baked donut recipe.

If you aren’t eating sugar free, you can use regular sugar in place of the Swerve sugar.  The coconut flour cannot be swapped out or substituted.  There’s a science behind the ratio of coconut flour to eggs.  Don’t like coconut??  Well good news….you don’t taste any coconut flavor in these donuts!

Baked Cinnamon Sugar Donuts

Serves: 10 Cooking Time: 12-15 minutes

Ingredients

  • 1/2 cup melted coconut
  • 1/2 cup Swerve Granular Sweetener
  • 6 eggs
  • 1 tablespoon vanilla extract (I used Rodelle)
  • 3/4 cup coconut flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • TOPPING:
  • 1/4 cup melted coconut oil
  • 1/2 cup Swerve Granular Sweetener
  • 1 teaspoon ground cinnamon
  • VANILLA FROSTING DIPPING SAUCE:
  • 1 cup Swerve confections sugar
  • 1 tablespoon melted coconut oil
  • 2 teaspoons vanilla extract
  • 1-2 tablespoons hot water

Instructions

Preheat oven to 350-degrees. Spray two donut pans with baking spray and set aside.

In a large bowl mix together the coconut oil, sugar, eggs, vanilla extract, coconut flour, baking powder, salt, cinnamon and nutmeg. Stir until all ingredients are combined and there are no clumps from the coconut flour.

Spoon the batter into the prepared donut pans.

Bake donuts in 350-degree oven for 12-15 minutes or until the tops of the donuts spring back when lightly touched. Remove from oven. As soon as donuts are cool enough to handle, remove the donuts from the pan and transfer onto a wire rack to cool completely.

TOPPING: in a small bowl, add the melted coconut oil. In a separate bowl, mix together the sugar and cinnamon. Dunk the tops of each donut in coconut oil then directly into the cinnamon-sugar.

DIPPING SAUCE: Combine the confectioners sugar, melted coconut oil, vanilla extract and water. Add additional sugar or water to reach desired dipping sauce consistency.

Notes

Store leftover donuts in an airtight container at room temperature. Donuts are best eaten within a day or two of making.

    Kelly, wow these are beautiful! I love a good donut, and this one looks a-mazing! I’m usually partial to the “old-fashioned” style of donut, you know, fried, and cake-y and full of texture, with just a glaze all over it. But I may have to give baked donuts a try! Thanks for the recipe!
