Crispy baked egg rolls, filled with barbecue pulled pork and cheese, and seasoned on top with barbecue seasoning. Baked in the oven or air fryer. This recipe is great for an appetizer or dinner, and perfect for using up leftover pulled pork.
Keep in mind that you don’t want your egg roll filling to be wet or too saucy, because then you will get soggy egg rolls. Make the BBQ Pulled Pork listed in the recipe a day or two in advance, and use the leftover pulled pork to make these egg rolls later. This gives the pork a chance to sit and soak in all the saucy goodness in the refrigerator, so the pork won’t be too wet when using in your egg rolls.
EGG ROLL CONSTRUCTION:
Lay an egg roll wrapper out on your workspace, diagonally. Brush the edges with the beaten egg.
In the middle of your egg roll wrapper, add a thin slice of cheese….
Add 2-3 tablespoons of pulled pork on top of the cheese slice.
Take the bottom triangle of the egg roll wrapper and roll the corner up and over the cheese and pulled pork in the middle of the roll.
Fold in you left and right corners into the middle of the egg roll. Looks like an envelope.
Tuck and roll the middle of the roll until it meets the top corner of the egg roll wrapper.
Place the fold side down, brush the top of the egg roll with egg wash and sprinkle BBQ seasoning on top. DON’T SKIP THE SEASONING ON TOP! Trust me….as I made these a few times before figuring out that the seasoning on top is money.
Now time to bake or air fry….I made these both ways, but definitely preferred the air fried version better. Plus it only took 9-minutes in the air fryer.
Baked Cheesy Pulled Pork Egg Rolls

- BBQ PULLED PORK:
- 1 Boston Butt or pork shoulder roast (5-6 pounds)
- 1 large yellow onion, quartered
- salt and pepper to taste
- 1 teaspoon barbecue seasoning
- 1 (28-ounce) bottle your favorite BBQ sauce
- 1/4 cup white vinegar
- 2 teaspoons liquid smoke
- CHEESY PULLED PORK EGG ROLLS:
- 8 Egg Roll Wrappers
- 1 egg, beaten
- 8 thin rectangle-sized slices of cheese (I used Colby Jack)
- leftover BBQ Pulled Pork, cold
- BBQ seasoning
Instructions
BBQ PULLED PORK: Place trimmed pork roast in the Crockpot. Season the pork roast and add the quartered onion on top. Cover the Crockpot with the lid and cook on low for 9-11 hours, or until tender and shreddable. Cooking time may vary depending on the size of your pork roast. Once pork is tender, remove the pork from the Crockpot and place in a large bowl. Discard the juices and onion.
Use two forks to pull the pork into shreds. Add the BBQ sauce, vinegar and liquid smoke to the pork and stir until combined. Pour the pork mixture back into the Crockpot and cook on high for 45-60 minutes. Serve. Store leftovers in an airtight container in the refrigerator.
EGG ROLLS: Take one JSL Foods Twin Dragon Egg Roll Wrapper and position it in a diamond shape. Lightly brush the edges of the egg roll wrapper with the beaten egg. In the middle of the egg roll wrapper add one slice of cheese and 2-3 tablespoons cold pulled pork on top of the cheese.
Take the bottom corner of the egg roll and fold it over the mixture, tucking the corner in. Fold the right and left corners in towards the middle. Keep the middle tight and roll up towards the top corner. Turn the egg roll over so the fold is on the bottom. Brush the top of the egg roll with egg and sprinkle barbecue seasoning on top.
Line air fryer basket with foil (for easy cleanup) and spray with baking spray. Place egg rolls in fryer basket and insert basket into air fryer. Set air fryer at 360-degrees for 6-minutes. After 6-minutes, open air fryer and turn egg rolls over. Air fry for an additional 3-minutes at 360-degrees. Serve warm and with barbecue sauce for dipping.
Notes
If baking your egg rolls, preheat the oven to 400-degrees and line a baking sheet with parchment paper. Bake egg rolls for 16-18 minutes, turning the egg rolls over halfway through the baking process to ensure they are crispy on all sides.
