Baked Buttermilk Donuts with Vanilla Buttermilk Glaze

These baked buttermilk donuts are inspired from the taste of a classic old-fashioned donut. Β It is a super easy batter to mix up, and the buttermilk in the donut batter, and glaze, adds a nice tang.

The batter is the texture of cake batter…not super thick, but not super runny.

 

I put the batter into a large ziplock bag, snipped off a corner, and piped the batter into the donut cavity. Β I have found this is the quickest and easiest way to fill the donut pans.

Baked Buttermilk Donuts with Vanilla Buttermilk Glaze

Serves: 15-17 Cooking Time: 8-9 minutes

Ingredients

  • DONUTS:
  • 1/4 cup unsalted butter, melted and cooled slightly
  • 1/4 cup vegetable oil
  • 3/4 cup white granulated sugar
  • 1/4 cup light brown sugar, packed
  • 2 eggs, room temperature
  • 1-1/2 teaspoons vanilla extract (I used Rodelle)
  • pinch of ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2-2/3 cups all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1 cup buttermilk, room temperature
  • GLAZE:
  • 1 tablespoon butter, melted
  • 1 tablespoon vanilla extract
  • 2 tablespoons buttermilk
  • 2-1/2 cups powdered sugar
  • warm water (if needed and added in small increments)
  • food coloring, optional
  • sprinkles

Instructions

DONUTS: Preheat oven to 425-degrees. Spray two-three donut baking pans with baking spray and set aside. In a large bowl, stir together the butter, oil, white sugar and brown sugar. Stir in the eggs one at a time. Add the vanilla extract, cinnamon and nutmeg. Stir until ingredients are incorporated. Stir in half the flour, the baking powder, baking soda, salt and half of the buttermilk, mixing until incorporated. Stir in the remaining flour and buttermilk.

Mix until combined and then transfer batter into a large ziplock bag. Snip off the corner of the ziplock bag and pipe the batter into the donut pan cavities.

Bake donuts one pan at a time, in 425-degree oven, for 8-9 minutes. Remove from the oven when the donuts spring back when you press on them. Let donuts rest in the pan for 5-minutes before removing and transferring to a wire rack to finish cooling. Continue baking process with remaining donut batter. Let donuts cool completely before glazing.

GLAZE: In a medium bowl, melt the butter. Stir in the vanilla extract, buttermilk and powdered sugar to the melted butter. Add more powdered sugar or water, a little at a time, to get your desired consistency. You are looking for a not-too-thick, not-too-thin consistency. Dunk the tops of cooled donuts in the glaze, add sprinkles and let set on wire rack until the glaze sets.

Notes

Enjoy donuts immediately or store in an airtight container at room temperature. Donuts are best eaten the day of, or within a day or two of baking.

    Love baked donuts! I really enjoy making them because they are easy and quick but most of all, they’re delicious! Buttermilk cake donuts are the best!!! That glaze is so pretty too! YUM! Pinning!

    First, great photos! You make the donuts look irroestiable! Second, I have a donut mold but the recipes I’ve tried in the past didn’t produce enough batter to actually fill the entire mold. I don’t want to give up so I’m excited to give your recipe a try!

    Oh my goodness, can I just tell you that I am in love. I love that these donuts are baked, not fried. I love the “Glaze”, (I like a little more “glaze” on my donuts. I’ll just say it. I love frosting. I love that they are buttermilk. And for a bonus, they are so pretty! Thank you for sharing.

    haha that’s so funny, as soon as I saw this post I thought….ooh now THESE are the perfect treats for you to bring into your coworkers! haha I just can’t help myself when it comes to the joke that all cops love donuts (though I’m sure you all do, who doesn’t right? lol). These look so fun and tasty! I always make baked donuts only because I don’t have a fryer, but love that they’re just as good when baked. The buttermilk is a great idea, I’m going to try that for my next batch. oh and glaze on a donut is a necessity for me, so you can put on extra for me please! πŸ˜€ xo

    These were delicious and so easy to make with my 8 year old daughter! She declared these donuts “the best ever and better than Dunkin donuts”! I love how simple the recipe was to follow for the both of us and in no time at all we had delicious fluffy donuts. thank you. this is going to be added to our Christmas morning buffet πŸ™‚
