Apple Butter Oatmeal Cookies

Apple Butter Oatmeal Cookies are like the equivalent to eating an apple pie, but in cookie form! Β Apple butter and chunks of apples in the dough make for a soft, apple-y cookie, full of warm spices.Β 

I had a jar of apple butter in the pantry that I was dying to use in a dessert and that is how this recipe came about. Β When creating recipes I tend to take ingredients I want to use and draw my inspiration from them, to create the recipes you find here.

Apple Butter Oatmeal Cookies

Serves: 15 Cooking Time: 11-minutes

Ingredients

  • 6 tablespoons unsalted butter, room temperature
  • 1/2 cup light brown sugar, packed
  • 1/2 cup white granulated sugar
  • 1/2 cup apple butter
  • 1 egg, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 cup Granny Smith apple chunks, peeled, finely chopped and drained
  • 1-1/4 cups all-purpose flour
  • pinch of salt
  • 2 teaspoons cornstarch
  • 1 teaspoon baking powder
  • 1-1/2 cups quick oats
  • 1 cup old-fashioned oats
  • SUGAR TOPPING:
  • 1/3 cup white granulated sugar
  • 1/2 teaspoon pumpkin pie spice (or ground cinnamon)

Instructions

Peel a Granny Smith apple and finely chop (approximately one half apple will equal a half cup of apple chunks). Dump the apple chunks onto a paper towel to soak up the excess moisture. Let the apple chunks sit on the paper towel until you are ready to add them into the cookie dough.

In the bowl of a stand mixer, affixed with the paddle attachment, add the butter, brown sugar and white sugar. Mix on medium-high speed until light and fluffy. Add in the apple butter and mix until incorporated. Scrape down the sides of the bowl as needed. Mix in the egg and vanilla extract. Mix until ingredients are well incorporated.

Change the mixer to low speed and mix in the apple chunks, flour, salt, cornstarch, baking powder and both oats. Mix until barely combined. Pour dough onto plastic wrap and place dough in the refrigerator to chill for at least two hours.

Once dough has chilled, preheat the oven to 350-degrees and line two baking sheets with parchment paper. In a small bowl, add the sugar and pumpkin pie spice for the topping. Scoop medium sized cookie dough balls and drop the balls into the sugar-spice to coat them. Place cookie dough balls a few inches apart on prepared baking sheets.

Bake cookies one cookie sheet at a time, in 350-degree oven, for 10-11 minutes. Remove baked cookies from the oven and let set on the pan for 10-minutes before transferring to a wire rack to finish cooling completely.

Notes

Store cookies in an airtight container at room temperature. Cookies will stay fresh for 5 days.

    These look so fantastic, that I wish I could reach through the screen and have a couple. They sound so good and they look soft and delicious! I’ll just have to make them for my husband who loves apple desserts of any sort.

    Oh man, those cookies look like trouble. I doubt they would last a nanosecond in this household! I usually prefer chocolate cookies, however, these look too good to pass up! YUM!!
