Light, fluffy from-scratch Angel Food Cake is easy to make, if you follow the step by step directions in this recipe. I don’t like cake (I know, I know….), but this Angel Food Cake is pretty much the best cake I have ever had. Totally worth having to buy the special pan to make this in!
Angel Food Cake is hands down a million times better than anything you can buy pre-made at the store. I am seriously passionate about this cake. The flavor of a from scratch Angel Food Cake has a totally different taste than a store bought one. Like there is no comparison. BUT….Angel Food Cake is a very particular cake. What do I mean by that? Well…. you have to follow this recipe exactly, in order to ensure success.
Angel Food Cake Success:
- You MUST use a tube pan (I have a two piece pan with a removable center)
- Do NOT grease the tube pan
- Egg whites only and fresh cream of tartar
- You have to use cake flour
- Follow the recipe and the steps exactly
I am not trying to be pushy…I just want you to have Angel Food Cake success too. I know it seems counterintuitive to not grease your pan, but the cake sticking to the sides of the pan as it bakes, is what helps the cake to rise to that glorious height. Which is why you have to use the tube pan. I separated the egg whites out by cracking the egg and dropping the contents into my hand and letting the whites slide through my fingers, into the bowl, leaving just the yolk. Do not get any yolk in your egg whites, or you will have issues achieving stiff peaks. Cake flour is the flour you have to use in this recipe. I haven’t tried any substitutions and know nothing about trying to make this gluten free. So I recommend sticking to cake flour for success. And now just follow the directions in the recipe 🙂
What do stiff peaks looks like? When you can turn the beater upside down and the egg whites hold their peak.
Angel Food Cake

- 1 cup cake flour (no substitutions)
- 3/4 cup white granulated sugar
- 12 egg whites, room temperature
- 1-1/2 teaspoons cream of tartar
- 1/4 teaspoon salt
- pinch of ground nutmeg
- 1-3/4 teaspoons vanilla extract
- 1/4 teaspoon almond extract (must include)
- 3/4 cup white granulated sugar
Instructions
Preheat oven to 375-degrees. DO NOT GREASE THE 2-PIECE ANGEL FOOD/TUBE PAN! Set aside.
In a medium bowl, sift together the cake flour and 3/4 cup sugar. Set aside.
In the bowl of a stand mixer, affixed with the whisk attachment, add the egg whites, cream of tartar, salt, nutmeg, vanilla extract and almond extract. Beat mixture until soft peaks form. Add the other 3/4 cup of white sugar to the mixer and beat on high until stiff peaks form.
Change the mixer speed to low and slowly add the flour mixture into the batter, stopping as soon as the flour is incorporated in the batter. Use a rubber spatula to fold in the sides and bottom on the batter, until all the ingredients are incorporated. Do not over mix, or you will lose the volume.
Pour/spoon batter into ungreased tube pan, in an even layer. Bake cake in 375-degree oven for 28-30 minutes, or until the top is golden and the top springs back with a soft touch.
Let cake cool on a wire rack. Once cake has cooled, slide a knife around the sides to loosen it, and then invert cake onto a cake plate. The bottom of the cake will now be the top.
Serve angel food cake as is, or with Cool Whip, fresh strawberries and granola for some crunch!
Notes
Store cooled cake in an airtight container at room temperature.
Enjoy this Angel Food Cake plain, or gather strawberries, Cool Whip and maybe even some crunchy granola for texture, and let everyone make their slice of cake how they like! I love the classic granola from My Favorite Indulgence!

I’ve heard it’s very diva-like and can be tricky to make, even more so for me probably because I’d have to try using my GF flour. A real experiment ahead, indeed! My mom loves this cake though so I’d like to try making it for her. Oh and I love that pic of you and your dad, SO sweet! xo
